Uplands Cheese Company, of Dodgeville, Wisconsin, produces Pleasant Ridge Reserve, which is surely one of the great "American originals." This artisan cheese is made by Cheesemaker, Mike Gingrich from raw milk of a single herd of Jersey cows, fed and managed using natural, "old world" practices.
