Deviled Eggs with Sweet Relish

Makes 1 DOZEN

For this twist on classic deviled eggs, sweet relish stands in for mustard. The result is balanced and delicious.

Ingredients:

  • 6 large hard-boiled eggs, peeled
  • 3 tablespoons mayonnaise
  • 1 tablespoon sweet relish, plus more for garnish
  • 1/2 teaspoon kosher salt
  • OPTIONAL:
  • Parsley leaves

Directions:

  1. Cut eggs in half lengthwise. Using a small spoon, remove yolks and transfer to a medium bowl. Place egg white halves, cut-side up, on a plate.
  2. Mash yolks with a fork or puree in a food processor. Add mayonnaise, relish, and salt. Stir well to combine.
  3. Spoon yolk mixture into reserved egg halves. Garnish with a dab of relish and parsley leaves, if using.
