Quiche with Smoked Trout and Goat Cheese

Recipe #912 | Serves 4

Ingredients:

flour for dusting
1 8-inch short crust recipe or prepared pie shell
1/2 cup sweet yellow onion, chopped
1 -2 tsp butter
2 cups half & half
3 eggs
1 tsp flour
8 -10 oz smoked trout
white pepper to taste
1/4 cup goat cheese, crumbled
red pepper jelly

Directions:

  1. Preheat oven to 400 degrees. Dust pie or quiche pan with flour and line with dough.
  2. In a small skillet set at medium-high heat, sauté the onions in 1-2 tsp butter. Cook until soft.
  3. In a mixing bowl, whisk the half & half, eggs, and 1 tsp flour until well incorporated. Add the smoked trout, and white pepper to taste.
  4. Fill the shell with the mixture; sprinkle the goat cheese evenly on top. Bake for 35-40 minutes until golden brown. Serve warm with a dollop of red pepper jelly.
