Recipe #1039 | Serves 4-6
|1/4 cup olive oil|
|1/2 cup onion, chopped|
|4 tsp garlic, minced|
|1 green bell pepper, diced|
|1 zucchini, diced|
|2 tbsp chili powder|
|1 tsp ground cumin|
|1 tsp dry oregano|
|1 15-oz can pinto beans, rinsed|
|1 15-oz can black beans, rinsed|
|1 8-oz can garbanzo beans, rinsed|
|1 15-oz can tomato sauce|
|hot chilies to taste|
|grated cheddar cheese and corn bread (optional)|
- Heat the olive oil in a Dutch oven or saucepan. Sauté the onions, garlic, green bell pepper and zucchini for 5 minutes.
- Add the remaining ingredients and simmer for 30 minutes to combine the flavors. Season with the hot chilies to taste.
- Serve as is or with a sprinkle of grated cheddar cheese. Warm corn bread is the perfect accompaniment.
