Vegetarian Chili

Recipe #1039 | Serves 4-6

Ingredients:

1/4 cup olive oil
1/2 cup onion, chopped
4 tsp garlic, minced
1 green bell pepper, diced
1 zucchini, diced
2 tbsp chili powder
1 tsp ground cumin
1 tsp dry oregano
1 15-oz can pinto beans, rinsed
1 15-oz can black beans, rinsed
1 8-oz can garbanzo beans, rinsed
1 15-oz can tomato sauce
hot chilies to taste
grated cheddar cheese and corn bread (optional)

Directions:

  1. Heat the olive oil in a Dutch oven or saucepan. Sauté the onions, garlic, green bell pepper and zucchini for 5 minutes.
  2. Add the remaining ingredients and simmer for 30 minutes to combine the flavors. Season with the hot chilies to taste.
  3. Serve as is or with a sprinkle of grated cheddar cheese. Warm corn bread is the perfect accompaniment.
