Mediterranean Tuna Salad Recipe

Mediterranean Tuna Salad

Serves 2 to 4

Albacore tuna shines in this Mediterranean-style salad. Spoon it on toasted slices of your favorite rustic bread or serve on a bed of fresh greens.

Ingredients:

  • 1 (6 ounce) can albacore tuna
  • 1 cup cooked white beans (such as cannellini), drained and rinsed
  • 1 (15 ounce) can red beans, drained and rinsed
  • 1/2 pint cherry tomatoes, halved
  • 1/4 small red onion, thinly sliced
  • 1/3 cup pitted kalamata olives, sliced
  • 1 sprig flat-leaf parsley, leaves removed and chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • Kosher salt, to taste
  • Pepper, to taste

Directions:

  1. In a large bowl, combine tuna, beans, tomatoes, onion, olives, and parsley. Toss gently.
  2. In a small bowl, whisk together olive oil, vinegar, and garlic. Season with salt and pepper, to taste. Add to salad and toss again.
  3. Serve immediately or cover and chill to allow flavors to blend. Serve with slices of crusty bread.
