Dungeness Crab Cakes
Recipe #1104 | Serves 4

Ingredients:
| 1 lb fresh crabmeat |
| 2 tbsp chervil, minced |
| 2 tbsp capers |
| 1/2 tsp red pepper flakes |
| 1/2 cup white bread crumbs |
| 1/2 cup mayonnaise |
| 3 tbsp olive oil |
| 1 cup prepared aïoli |
| Garnish: 8 large lettuce leaves |
| roasted potatoes (optional) |
Directions:
- In a bowl mix all ingredients except olive oil and aïoli. Form 8 round crab cakes about 1/2-inch thick
- Heat the olive oil in a large skillet. Brown the cakes for 2 minutes on each side.
- Serve at once on lettuce leaves with roasted potatoes and the prepared aioli sauce on the side.
