Halibut with Ginger
Recipe #605 | Serves 4
|3 tbsp olive oil|
|4 6-oz halibut fillets|
|2 tbsp butter|
|1 large tomato, diced|
|1/4 cup fresh lemon juice|
|2 tbsp cilantro, finely chopped|
|1 tbsp fresh ginger, finely chopped|
|1 tbsp garlic, finely chopped|
|salt and pepper to taste|
|steamed jasmine rice (optional)|
- Heat the olive oil in a large skillet; cook the halibut fillets for 2-4 minutes on each side, until done. Remove the fish to a warm serving platter.
- Add butter, tomato, lemon juice, cilantro, ginger, and garlic, to the skillet. Simmer for 1 minute, salt and pepper to taste.
- Spoon the sauce around the halibut fillets and serve at once with jasmine rice.
