Halibut with Ginger

Recipe #605 | Serves 4

Ingredients:

3 tbsp olive oil
4 6-oz halibut fillets
2 tbsp butter
1 large tomato, diced
1/4 cup fresh lemon juice
2 tbsp cilantro, finely chopped
1 tbsp fresh ginger, finely chopped
1 tbsp garlic, finely chopped
salt and pepper to taste
steamed jasmine rice (optional)

Directions:

  1. Heat the olive oil in a large skillet; cook the halibut fillets for 2-4 minutes on each side, until done. Remove the fish to a warm serving platter.
  2. Add butter, tomato, lemon juice, cilantro, ginger, and garlic, to the skillet. Simmer for 1 minute, salt and pepper to taste.
  3. Spoon the sauce around the halibut fillets and serve at once with jasmine rice.
