Halibut with Ginger
Recipe #605 | Serves 4

Ingredients:
| 3 tbsp olive oil |
| 4 6-oz halibut fillets |
| 2 tbsp butter |
| 1 large tomato, diced |
| 1/4 cup fresh lemon juice |
| 2 tbsp cilantro, finely chopped |
| 1 tbsp fresh ginger, finely chopped |
| 1 tbsp garlic, finely chopped |
| salt and pepper to taste |
| steamed jasmine rice (optional) |
Directions:
- Heat the olive oil in a large skillet; cook the halibut fillets for 2-4 minutes on each side, until done. Remove the fish to a warm serving platter.
- Add butter, tomato, lemon juice, cilantro, ginger, and garlic, to the skillet. Simmer for 1 minute, salt and pepper to taste.
- Spoon the sauce around the halibut fillets and serve at once with jasmine rice.
