Gazpacho Soup
Recipe #705 | Serves 4

Ingredients:
| 4 ripe tomatoes, peeled |
| 1 cucumber, peeled |
| 1 celery stalk |
| 1 garlic clove |
| 1/2 cup onion |
| 1/4 cup olive oil |
| 3 tbsp wine vinegar |
| salt and pepper to taste |
| Garnish: fresh basil, Our Own croutons |
Directions:
- Chop all ingredients and combine in a glass bowl. Refrigerate for 2 hours.
- With a food mill or processor, puree the mixture.
- Serve in chilled soup bowls and top with croutons and a sprig of fresh basil.
