|4 ripe tomatoes, peeled|
|1 cucumber, peeled|
|1 celery stalk|
|1 garlic clove|
|1/2 cup onion|
|1/4 cup olive oil|
|3 tbsp wine vinegar|
|salt and pepper to taste|
|Garnish: fresh basil, Our Own croutons|
- Chop all ingredients and combine in a glass bowl. Refrigerate for 2 hours.
- With a food mill or processor, puree the mixture.
- Serve in chilled soup bowls and top with croutons and a sprig of fresh basil.
