Irish Casserole

Ingredients
  • 1 head savoy cabbage
  • 8 small carrots
  • 8 small yellow potatoes
  • 4 tbsp butter
  • 12 fresh pearl onions, peeled and left whole
  • 2 garlic cloves, minced
  • 8 fresh Italian sausages
  • salt and pepper to taste
  1. Core, quarter, and cook the cabbage in salted boiling water for 10 minutes until tender. Drain and keep warm. 2.Peel the carrots and potatoes; cook in salted boiling water for 10 minutes until tender. Drain and keep warm (reserve 1 cup of the cooking liquid).
  2. Heat the butter in a braising pan. When the butter starts to foam, add the garlic, onions, and sausages. Cook over medium heat for 10 minutes until the sausages and onion are golden brown. Arrange the blanched vegetables around the sausages. Add the cup of reserved cooking liquid and simmer for 8 to 10 minutes. Season with salt and pepper. Serve at once with horseradish and mustard on the side.
