Herbes de Provence with Lavender
Serves 1/4 cup
This aromatic seasoning is a blend of herbs grown in the Provence region of southern France. Ingredients and proportions vary—some say lavender isn’t traditional; however, we like the summery, floral notes it adds. Herbes de Provence is great with lamb, chicken, pork, and rich seafood, such as tuna or salmon. It’s also delicious sprinkled on roasted potatoes. The recipe is easy to double, so make a big batch and keep it on hand.
Ingredients:
- 1 Tbsp dried thyme
- 1 Tbsp dried basil
- 1 Tbsp culinary lavender
- 2 tsp dried rosemary
- 1 tsp dried oregano, marjoram, or sage
Directions:
- Combine all ingredients in a jar with a tight-fitting lid. If lavender or rosemary is very firm, crush it with a mortar and pestle or pulse a couple of times in a spice grinder.
- Store in a dark, cool place.

- For a shortcut, combine 1 Tbsp commercial Herbes de Provence with 1 Tbsp culinary lavender.
