Cinnamon Pumpkin Seeds


Enjoy two quintessential flavors of fall — cinnamon and maple, with a touch of cardamom for warmth.


  • 1 cup fresh pumpkin seeds, rinsed and dried (see Cook’s Tip)
  • 2 teaspoons maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom


  1. Preheat oven to 350°F.
  2. In a small bowl, toss pumpkin seeds with syrup.
  3. Sprinkle with cinnamon and cardamom. Toss to evenly distribute spices.
  4. Spread seeds in a single layer on a parchment-lined baking sheet.
  5. Roast for 10 to 15 minutes, until toasted to your liking.
  6. Cook’s Tip:
  7. Remove as much moisture as possible from the seeds. Spread them on a clean, lint-free towel or a double layer of paper towels and pat dry – or place them in a double layer of paper grocery bags with a few paper towels, fold the top closed, and shake to dry the seeds.
