Brown Butter Almond Streusel Topping
MAKES 2 1/2 CUPS
This topping comes from Pastry Chef, Jens Melin. Browning the butter makes this streusel especially fragrant and flavorful. It is outstanding on muffins, crumble pie, and banana bread. It can also be toasted and sprinkled over ice cream.
Ingredients:
- 1 cup sliced almonds
- 1 cup light brown sugar, lightly packed
- 1 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1/2 cup (1 stick) unsalted butter
- 1/2 teaspoon almond extract
Directions:
- In a large bowl, combine almonds, brown sugar, flour, and salt. Mix to combine.
- In a small saucepan, melt butter on medium heat. Continue to cook until foam subsides and butter solids turn golden brown and fragrant, about 6 to 8 minutes. Pour over almond mixture.
- Add almond extract and mix until evenly combined. Store in an airtight container in refrigerator for up to 4 weeks until ready to use.

- This recipe is easy to double. We recommend making a big batch so it's always on hand to top muffins, quick breads, and more. Freeze in 1 cup portions to streamline future baking projects.
