Brown Butter Almond Streusel Topping


This topping comes from Pastry Chef, Jens Melin. Browning the butter makes this streusel especially fragrant and flavorful. It is outstanding on muffins, crumble pie, and banana bread. It can also be toasted and sprinkled over ice cream.


  • 1/2 cup (1 stick) unsalted butter
  • 1/2 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 cup light brown sugar, lightly packed
  • 1 cup sliced almonds


  1. In a large bowl, combine almonds, brown sugar, flour, and salt. Mix to combine.
  2. In a small saucepan, melt butter on medium heat. Continue to cook until foam subsides and butter solids turn golden brown and fragrant, about 6 to 8 minutes. Pour over almond mixture.
  3. Add almond extract and mix until evenly combined. Store in an airtight container in refrigerator for up to 4 weeks until ready to use.
