Beef Bourguignon Recipe

Beef Bourguignon

Serves 6

Julia taught us that French cooking is not out of our reach. You can make this without attending a fancy culinary school!

Ingredients:

  • 4 slices bacon, sliced crosswise into 1/2-inch pieces
  • 2 pounds boneless beef chuck roast or stew meat, cut into 1-inch pieces
  • Kosher salt, to taste
  • Pepper, to taste
  • 1/4 cup all-purpose flour
  • 1 tablespoon minced garlic
  • 2 tablespoons tomato paste
  • 1/2 cup beef broth
  • 2 cups dry red wine
  • 2 tablespoons dried marjoram leaves, crushed
  • 8 ounces baby carrots (about 1 3/4 cups)
  • 8 ounces fresh pearl onions, peeled, or frozen pearl onions, thawed
  • 8 ounces cremini mushrooms, cut in half, if large
  • OPTIONAL:
  • Chopped parsley leaves

Directions:

  1. In Dutch oven or large heavy pot with lid, cook bacon over medium heat 6 to 8 minutes or until crisp, stirring frequently. Remove with slotted spoon to paper towel-lined plate. Set aside. Reserve drippings.
  2. Heat 2 tablespoons reserved bacon drippings in same pot used to fry bacon. Working in batches, so as not to crowd pan, sear beef on all sides over medium-high heat. Add additional bacon drippings or oil, as needed. Transfer seared beef to a plate and set aside.
  3. Pour off all but 1 tablespoon drippings from pot. Add tomato paste and garlic. Cook 1 to 2 minutes until fragrant. Add broth and stir, scraping up browned bits from bottom. Stir in wine and marjoram. Return beef to pot and bring to boil. Reduce heat, cover tightly, and simmer gently 1 hour.
  4. Add carrots and onions to pot. Return to simmer and continue cooking, covered, 20 minutes. Stir in mushrooms and bacon. Continue simmering, covered, 10 minutes or until beef and vegetables are fork-tender.
  5. Taste and season with salt and pepper, as desired. Remove from heat. Skim fat from cooking liquid, if necessary. Garnish with parsley, if desired, and serve hot.
