Peach and Fresh Mozzarella Salad
3 large peaches, cubed
1 ball fresh stretched mozzarella, cut into bite-size pieces
1/4 cup fresh basil, chopped
1/4 cup pistachios, chopped
2 Tablespoon balsamic vinegar, for drizzling
1 Teaspoon Metropolitan Market olive oil, for drizzling
Salt, to taste
Greens, Arugula or Toasted Crostini (optional)
- Combine peaches, fresh stretched mozzarella, basil, and pistachios in a medium sized bowl.
- Drizzle with olive oil and balsamic. Season with a pinch of salt and lightly toss.
- Serve on a bed of greens or on Crostini.
