Peach and Fresh Mozzarella Salad

Serves 2


  • 3 large peaches, cubed
  • 1 ball fresh stretched mozzarella, cut into bite-size pieces
  • 1/4 cup fresh basil, chopped
  • 1/4 cup pistachios, chopped
  • 2 Tablespoon balsamic vinegar, for drizzling
  • 1 Teaspoon Metropolitan Market olive oil, for drizzling
  • Salt, to taste
  • Greens, Arugula or Toasted Crostini (optional)


  1. Combine peaches, fresh stretched mozzarella, basil, and pistachios in a medium sized bowl.
  2. Drizzle with olive oil and balsamic. Season with a pinch of salt and lightly toss.
  3. Serve on a bed of greens or on Crostini.
