Pork Chop Skillet with Apples

Serves 6

Sweet apples and earthy mustard partner perfectly with thick, braised pork chops to form an easy, autumn-inspired, skillet supper.

Ingredients:

  • 6 pork chops, 3/4-inch thick
  • Kosher salt, to taste
  • Pepper, to taste
  • 2 cups apple cider
  • 1/3 cup coarse ground mustard
  • 2 teaspoons vegetable oil
  • 3 medium apples, peeled, cored, and sliced1/2-inch thick
  • 2 tablespoons cornstarch

Directions:

  1. Pat-dry pork chops with paper towels. Season both sides with salt and pepper.
  2. In a small bowl, whisk together apple cider and mustard.
  3. In a large skillet, heat oil over medium-high heat. Sear pork chops until brown on both sides.
  4. Transfer pork chops and apples to a serving platter; keep warm.
  5. Mix cornstarch with 2 tablespoons water. Stir into pan juices and bring to boil. Simmer until sauce is reduced to desired thickness. Season to taste. To serve, pour sauce over pork chops and apples.

“I was drawn by the apples with apple juice and coarse-grain mustard. the taste of the sauce was very good! i found that the pork chops cooked more quickly than the recipe. i browned on only one side and then checked the temperature after the 8 minutes of braising. to my surprise, the temp was much higher than the expected 145 degrees. next time, i'll check the temperature after only 4-5 minutes into the braise. i will make this again!!”
