Sautéed Kale with Garlic and Onion

Serves 4

Kale is loaded with vitamins, is rich in calcium, and is a great source of fiber. It's delicious on pasta, with grains, and paired with grilled chicken.

Ingredients:

  • 3 tablespoons extra virgin olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 bunches lacinato or curly kale, ribs removed and leaves chopped
  • 3/4 cup vegetable stock
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds

Directions:

  1. In a large skillet, heat olive oil over medium-high heat. Add onion and cook until soft, about 3 to 5 minutes. Stir in garlic.
  2. Add kale, vegetable stock, and soy sauce. Stir to blend. Cover and simmer 5 to 7 minutes.
  3. Remove cover and cook an additional 1 to 2 minutes or until liquid has evaporated.
  4. Remove from heat and sprinkle with sesame seeds.
