Skillet Raclette (Melted and Scraped Swiss Cheese)

Serves 4

Raclette is an Alpine cheese that's traditionally heated next to fire and scraped off in layers onto new potatoes. For our version, we melt slices of raclette in a cast iron skillet and then scoop the bubbling cheese onto plates to eat with a variety of accompaniments.

Ingredients:

  • 1 pound small new potatoes, boiled or roasted until tender
  • 8 ounces cornichon pickles
  • 2 crisp apples, sliced
  • 1 baguette, sliced
  • 1 pound broccoli, blanched
  • 1 pound Raclette cheese, sliced 1/2-inch thick
  • OPTIONAL:
  • Grainy mustard and chutneys to complement the cheese

Directions:

  1. Arrange accompaniments on a serving platter.
  2. Place one layer of cheese into small, cast-iron skillet or casserole dish. Heat over medium heat until bubbling or bake at 375°F 10 to 12 minutes.
  3. Carefully transfer hot skillet to table. Place skillet on trivet and be sure to put a hot pad on handle so no one touches it by mistake.
  4. Use a knife or spatula to scoop out hot cheese onto each plate for your guests. When cheese is gone, heat more.
