Pickled Red Onions

Makes 3, 8-ounce jars

Pickled red onions are a tasty addition to so many dishes. They're great on tacos, sandwiches, burgers, and salads. A pretty jar of them makes a wonderful homemade gift! This recipe makes enough for three jars—two to give away and one to keep!

Ingredients:

  • 1 cup apple cider vinegar
  • 2 tablespoons granulated sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon yellow mustard seeds
  • 1 large red onion, thinly sliced

Directions:

  1. In a medium bowl, combine vinegar, 1 cup water, sugar, and salt. Whisk until sugar and salt dissolve.
  2. Divide spices and onions between 3, 8-ounce jars. Pour vinegar mixture evenly over onions. Cover and let sit at room temperature at least 1 hour before serving. Refrigerate up to 1 week.
