The Pear-fect Mocktail “Zero-Alcohol”

Elegant and delicious, this clever mocktail featuring perfectly ripe Comice pears is sure to become a favorite this holiday season. The secret ingredient is a non-alcoholic spirit—Seedlip Spice 94, which exudes the flavors of allspice and cardamom with notes of lemon and grapefruit.

Ingredients:

  • 1/2 ripe Comice pear, peeled and cored
  • 1 teaspoon lemon juice
  • Pinch of salt
  • 2 ounces Seedlip Spice 94 non-alcoholic spirit
  • 1 egg white (or 2 tablespoons aquafaba)
  • 2 teaspoons elderflower syrup or simple syrup (see Bartender's Tip)
  • 2 ice cubes
  • OPTIONAL:
  • Dash of ground nutmeg
  • Lemon twist or wheel

Directions:

  1. In a shaker, muddle pear with lemon juice and salt until pureed. Add Seedlip, egg white, and syrup. Shake a couple of times to blend. Add ice and shake vigorously for 30 seconds, until creamy.
  2. Strain into a coupe or your favorite cocktail glass, pressing with the back of a spoon to extract all the liquid. Top with nutmeg and lemon twist or wheel.
  3. Bartender's Tips:
  4. If you don't have a shaker, double the ingredients to have enough to process in a blender and follow step 2.
  5. The elderflower syrup enhances the pear flavor and aroma. You can also use the elderflower syrup in fruit desserts and other beverages. If you like, you may substitute simple syrup for the elderflower syrup in this recipe. Just heat equal parts sugar and water until the sugar is dissolved and the mixture is slightly thickened.
