Cranberry Gin Cocktail

Makes about 8 servings

For a festive presentation, sugar the rims of your glasses by rubbing them with a slice of lemon and dipping in superfine sugar. Be sure to make the cranberry simple syrup for this cocktail ahead of time so it can chill.

Ingredients:

  • 8 ounces gin
  • 4 ounces Cranberry Simple Syrup (recipe follows)
  • 4 ounces fresh lemon juice
  • 1 (750 ml) bottle sparkling wine, chilled
  • Cranberry Simple Syrup:
  • 1 cup granulated sugar
  • 1 cup cranberry juice

Directions:

  1. Make cranberry syrup: In a small saucepan, combine sugar and cranberry juice. Bring to boil over medium heat, stirring to dissolve sugar. Transfer to a sealed jar and refrigerate until cold.
  2. In a large pitcher, combine gin, cranberry syrup, and lemon juice. Chill until cold.
  3. Just before serving, stir cocktail mixture. Carefully add sparkling wine.
  4. Pour into elegant glasses and serve.
