Cherry Clafoutis Recipe

Cherry Clafoutis

Serves 6 to 8
This classic French fruit and custard dessert is simply delicious, we love it still warm from the oven. Any leftovers make a great breakfast.

Ingredients:

  • 1 lb (about 2 cups) cherries
  • 1 cup milk
  • 3 eggs
  • 1/3 cup sugar
  • 1/3 cup all-purpose flour
  • 1/2 tsp salt
  • 6 Tbsp butter, melted
  • 1/2 tsp almond or vanilla extract
  • 2 Tbsp sanding sugar or granulated sugar

Directions:

  1. Preheat oven to 400°F and butter a 9-inch deep-dish pie plate or 8x8-inch baking dish.
  2. Pit cherries and arrange in a single layer in the buttered dish.
  3. In blender, combine milk, eggs, sugar, flour, salt, butter, and extract; blend for 30 seconds until well combined.
  4. Pour batter into the pan over the cherries; sprinkle with sugar and bake for about 40 minutes or until puffed, golden brown and toothpick inserted in center comes out clean.
  5. Let cool 20 minutes before serving; refrigerate any leftovers for up to 2 days.
