Homemade Strawberry Sauce

Makes about 1-1/3 cups

Delicious on ice cream, waffles, or drizzled on oatmeal – or just about anything. The sugar needed will vary depending on the ripeness of your berries.


  • 1 pint strawberries, hulled and sliced
  • 1/4 to 1/3 cup sugar
  • 1 tsp cornstarch
  • 1 Tbsp water
  • 1 tsp fresh lemon juice


  1. Combine the strawberries and sugar together in a medium saucepan. Bring to a simmer over medium heat, simmering until the berries begin to break down, 8 to 10 minutes.
  2. In a small bowl, whisk together the cornstarch and water. Add to the strawberries and simmer 1 minute, or until thickened. Stir in the lemon juice, remove from the heat and cool to room temperature.
  3. Serve or chill, covered, in the refrigerator for up to 2 days.
