Ham & Gruyere Egg Muffins


These savory egg bites are a delicious way to use Metropolitan Market Kurobuta Ham. Metropolitan Market Prosciutto and Bacon are great substitutes, if you don't have ham.


  • 4 Metropolitan Market eggs
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup cream or milk
  • 1/2 cup Metropolitan Market Kurobuta Ham, diced
  • 4 leaves fresh basil
  • 1/4 cup grated gruyere or mild cheddar cheese
  • 1 Tbsp butter, for greasing the ramekins


  1. Preheat oven to 300°F.
  2. In a medium bowl, whisk eggs with salt and pepper until blended. Whisk in cream or milk.
  3. Butter four (1/2-cup) ramekins or other baking molds. Place 2 tablespoons of ham in the bottom of each. Add one basil leaf, torn into pieces, and 2 teaspoons cheese. Carefully spoon egg mixture into each ramekin, dividing evenly.
  4. Bake for 20 to 25 minutes or until set.
  5. Serve warm or at room temperature, in ramekins or inverted onto plates.
