
Chorizo Chile Stuffing Recipe

Chorizo Chile Stuffing
Serves 12 (or 6 if you want leftovers!)
Ingredients:
- 1 package Metropolitan Market Classic Holiday Stuffing Mix (bread cubes + seasoning packet)
- 1 stick (4 oz.) butter or 1/2 cup vegetable oil, plus 1 to 2 tablespoons more to top stuffing
- 2 cups chopped yellow onion
- 1 cup chopped celery
- 2 tsp chili powder
- 1 1/2 to 2 tsp ground cumin
- 2 1/2 to 3 cups chicken or vegetable broth
- 1 can (7 oz) diced green chiles, drained
- 1/2 cup thinly sliced, seeded fresh red jalapeño, Fresno pepper, or mini red bell pepper (If you don’t want it spicy use the mini bell peppers that are sweet)
- 1/2 cup chopped cilantro, optional
Directions:
- Preheat oven to 350°F. Oil or butter a 9 x 13-inch baking dish.
- Place a large, deep skillet over medium heat. Add butter or oil, onion, and celery. Cook, stirring often, until onion and celery are soft. Add chili powder and cumin; stir for a few seconds, until fragrant. Stir in 2 1/2 cups broth, contents of seasoning packet, green chiles, sliced pepper, and cilantro, if using. Stir in bread cubes. Blend well, adding up to 1/2 cup additional broth to moisten stuffing as you like.
- Spoon stuffing into pan. Dot with 1 to 2 Tbsp butter or drizzle with oil. Cover tightly with oiled foil. Bake for 20 to 30 minutes, until hot. Remove foil and return to oven for 5-10 minutes or until top is crisp.
- Serve warm.
- Pro Tip:
- Add Metropolitan Market Chorizo: In step 2, before cooking onion and celery, squeeze sausage from casings of 2 links of Metropolitan Market Chorizo into the skillet. Add 1 tablespoon of butter or oil and cook the sausage, breaking into small pieces with a heat-proof spatula, until brown and cooked through. Add remaining butter, onion, and celery and proceed with recipe (Step 2).
