Spicy Kimchee Broth Recipe

Spicy Kimchee Broth

Serves 3-4

This is a spicy, warm, satisfying broth for cold nights.


  • 1 Tbsp neutral-tasting oil
  • 1 cup green onions, sliced
  • 1 Tbsp garlic, peeled, sliced
  • 1 Tbsp fresh ginger, minced
  • 4 cups water
  • 1 Tbsp soy sauce or Tamari
  • 1 Tbsp gochujang (Korean chili paste)
  • 1/2 cup kimchi liquid
  • Sesame oil
  • kimchi, chopped, drained


  1. In a large saucepan, heat oil over medium heat. Add green onions, garlic and ginger and cook until onion is soft. Add water, soy sauce and gochujang. Bring to a boil, then reduce heat and simmer gently for 2 minutes.
  2. If desired, strain through a fine-meshed strainer, discarding solids and reserving broth. Add kimchi liquid. Reheat gently if needed, but do not boil.
  3. To serve, add a splash of sesame oil, diced kimchi, and more soy sauce or gochujang, as you like. For increased heartiness, add rice and/or tofu.
