Spicy Kimchee Broth Recipe
Spicy Kimchee Broth
Serves 3 to 4
This is a spicy, warm, satisfying broth for cold nights.
Ingredients:
- 1 tablespoon vegetable oil
- 1 bunch green onions, sliced (about 1 cup)
- 5 cloves garlic, peeled and sliced
- 1 tablespoon grated, peeled fresh ginger root
- 1 tablespoon soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 1/2 cup kimchee liquid
- Toasted sesame oil
- Kimchee, drained and chopped
Directions:
- In a large saucepan, heat oil over medium heat. Add green onions, garlic, and ginger and cook until onion is soft. Add 4 cups water, soy sauce, and gochujang. Bring to a boil; then, reduce heat and simmer gently 2 minutes.
- If desired, strain through a fine-meshed strainer, discarding solids and reserving broth. Add kimchee liquid. Reheat gently if needed, but do not boil.
- To serve, add a splash of sesame oil, chopped kimchee, and more soy sauce or gochujang, as you like. For increased heartiness, add rice and/or tofu.
