Halibut with Ginger Tomato Sauce

Serves 4

Quick And Great For Halibut Season!


  • 3 Tbsp olive oil
  • 4 (6 oz) halibut fillets
  • 2 Tbsp butter
  • 1 large tomato, diced
  • 1/4 cup fresh lemon juice
  • 2 Tbsp cilantro, finely chopped
  • 1 Tbsp fresh ginger, finely chopped
  • 1 Tbsp garlic, finely chopped
  • Salt and pepper, to taste


  1. Heat the olive oil in a large skillet over medium-high heat; cook the halibut fillets for 4 to 5 minutes on each side, until done. Remove the fish to a warm serving platter. Cover and keep warm.
  2. Add butter, tomato, lemon juice, cilantro, ginger, and garlic, to the skillet. Simmer for 1 minute. Add salt and pepper to taste. Spoon the sauce around the halibut fillets and serve warm.
  3. Delicious with pasta, rice or crusty bread.
