Shrimp Tacos with Avocado Tomato Salsa

Serves 4

Ingredients:

  • SALSA:
  • 2 tomatoes, diced
  • 2 avocados, diced
  • 1 - 2 serrano chilies, minced
  • 1/4 cup chopped cilantro
  • 2 Tbsp Metropolitan Market extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 2 tsp minced garlic
  • PRAWNS:
  • 2 Tbsp Metropolitan Market extra virgin olive oil
  • 4 poblano chilies, cut into strips
  • 2 tsp minced garlic
  • 24 prawns, peeled and de-veined
  • 1/4 cup fresh lime juice
  • Salt, to taste
  • Warm flour tortillas

Directions:

  1. Combine all salsa ingredients in a bowl. Set aside and marinate for 30 minutes.
  2. Heat the olive oil in a skillet; Add the poblano chilies and garlic. Stir and cook until soft. Add prawns and cook for 2 to 4 minutes, until cooked through.
  3. Season with lime juice and salt, to taste. Serve at once with the reserved salsa and warm flour tortillas.
