Shrimp Scampi Recipe

Ingredients:

  • 1 tablespoon kosher salt, plus more to taste
  • 3/4 pound capellini pasta
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup dry white wine
  • 1 pound large shrimp, peeled and deveined
  • Pepper, to taste
  • 1/2 cup chopped fresh flat-leaf parsley leaves
  • 1 lemon, cut into wedges

Directions:

  1. Bring a large pot of water to boil. Add 1 tablespoon salt and pasta. Cook according to package directions.
  2. While pasta cooks, heat a large skillet over medium heat. Add oil. Once hot, stir in garlic and red pepper flakes. Cook until garlic is soft and fragrant, 1 to 2 minutes. Add wine and bring to simmer. Add shrimp. Season with salt and pepper, to taste. Cook 2 to 3 minutes, until shrimp are pink and cooked through.
  3. Drain pasta, reserving 1 cup cooking water. Add pasta and parsley to skillet with shrimp. Toss to combine. Add some of the reserved water, if needed, to keep moist. Season with salt and pepper, to taste.
  4. Serve immediately with lemon wedges.
