Flatbread with Sweet Onions, Goat Cheese, and Speck

MAKES 4

Serve as is or top with arugula for freshness and bite.

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 sweet onions, thinly sliced
  • 4 flatbreads such as pita or naan
  • 4 tablespoons extra virgin olive oil
  • 4 ounces goat cheese
  • 1/4 cup heavy whipping cream
  • 8 slices speck or prosciutto
  • 4 sprigs thyme, leaves picked
  • Kosher salt, to taste
  • Pepper, to taste

Directions:

  1. Preheat oven to 400°F.
  2. Heat butter in a large skillet over medium-low heat. Add onions and cook 15 to 20 minutes or until onions are very soft and golden brown. Cool slightly.
  3. Place flatbreads on large baking sheet. Brush with olive oil. In a small mixing bowl, beat together goat cheese and cream. Spread mixture over flatbreads. Top with caramelized onions and speck slices. Sprinkle with thyme, salt, and pepper.
  4. Bake 10 to 15 minutes or until cheese is bubbling and edges of bread are toasted.
  5. Cut into pieces. Serve warm.
