Herbes de Provence with Lavender (French Herb Blend) Recipe

Herbes de Provence with Lavender (French Herb Blend)

Makes 1/4 cup

This aromatic seasoning is a blend of herbs grown in the Provence region of southern France. Ingredients and proportions vary—some say lavender isn't traditional; however, we like the summery, floral notes it adds. Herbes de Provence is great with lamb, chicken, pork, and rich seafood such as tuna or salmon. It's also delicious sprinkled on roasted potatoes. The recipe is easy to double, so make a big batch and keep it on hand.

  • 1 tablespoon dried thyme
  • 1 tablespoon dried basil
  • 1 tablespoon culinary lavender
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried oregano, marjoram, or sage

  1. If lavender or rosemary is very firm, crush it with a mortar and pestle or pulse a couple of times in a spice grinder.
  2. Combine all ingredients in a jar with a tight-fitting lid. Store in a dark, cool place.
  3. Cook's Tip
  4. Chef's Note:
  5. For a shortcut, combine 1 tablespoon commercial Herbes de Provence with 1 tablespoon culinary lavender.
