Kale & Ginger Popsicles

Serves 6 (1/2 cup portions)

Nutrient-rich kale provides vibrant color to these popsicles with added zing from orange juice, pineapple, and a touch of ginger.


  • 3/4 cup orange juice
  • 3 cups chopped kale leaves (see Cook’s Tip)
  • 3 cups pineapple chunks (about 1 whole pineapple)
  • 2 bananas
  • 1 Tbsp grated ginger
  • 6 servings hydration drops (optional)


  1. Place ingredients in a blender in the order listed. Blend until smooth.
  2. Pour into popsicle molds, add sticks, and freeze until firm.

  4. You can substitute spinach for the kale.
