Grilled Figs with Cheese and Dukkah
Serves 8
Dukkah is a nut, seed, and spice mixture that originated in Egypt, is easy to make, and is delicious with figs! Serve these yummy bites with green olives and slices of grilled artisan bread.
Ingredients:
- 8 ripe, but firm, figs
- 1 - 2 tablespoons extra virgin olive oil
- 3 tablespoons soft blue cheese
- 2 - 3 tablespoons Dukkah or chopped, roasted pistachios
- Baslamic Vinegar
- Chopped fresh Italian parsley
Directions:
- Slice off fig stems. Make an x-cut across the top of each fig, cutting about halfway down through the fruit to make an opening for the filling. Brush figs llightly with olive oil. Stuff each fig with about 1 teaspoon cheese.
- Place on hot, clean, oiled grill. Cover and cook 5 minutes or until figs are hot and lightly browned and cheese is warm.
- Remove to a plate. Sprinkle with dukkah or pistachios. Drizzle with balsamic vinegar and sprinkle with parsley.
- Cook’s Tip:
- Instead of grilling, you can roast the filled figs on an oiled baking sheet in a 400°F oven.
