Northwest BBQ Rub Recipe

Northwest BBQ Rub

MAKES 1 CUP

By combining classic flavors of the Pacific Northwest, we've developed a unique take on barbeque. This rub is herby, woodsy, and savory. Try it on pork ribs and serve with our Northwest BBQ Relish. It's sure to become your new, summer cookout favorite!

Ingredients:

  • 3 tablespoons onion powder
  • 3 tablespoons garlic granules
  • 2 tablespoons dried thyme
  • 2 tablespoons dried rosemary
  • 2 tablespoons fennel seeds
  • 1 tablespoon black peppercorns
  • 1/2 cup (0.5 ounce) dried wild mushrooms, (such as porcinis, chanterelles or morels)
  • 3 tablespoons Alderwood smoked sea salt

Directions:

  1. Grind up mushrooms, fennel seeds, and black pepper in spice grinder until a smooth powder.
  2. Add rosemary and thyme to grinder. Pulse a few times to break up the larger pieces.
  3. Transfer to a bowl. Add remaining ingredients. Whisk everything together until evenly combined, being sure to break up any clumps.
  4. Store in an airtight container up to 3 months.
