Loco Moco (Beef Patties, Fried Eggs, and Gravy)

Serves 2 TO 4

Loco Moco originated in Hilo, Hawaii, at the request of teens wanting an inexpensive, but delicious alternative to sandwiches. It optimizes a type of cuisine known as Local Kine Grindz - humble comfort foods that are ubiquitous around the islands.

Ingredients:

  • 1 pound ground beef (80-85% fat)
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1 sweet onion, sliced thin
  • 4 tablespoons (1/2 stick) unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 4 large eggs
  • Cooked white rice

Directions:

  1. Place beef in bowl. Sprinkle with spices. Mix lightly to combine. Form into 4 thin patties. Make an indentation with your thumb into the center of each burger.
  2. Heat a large skillet on medium-high heat. Drizzle with oil. Arrange patties in pan. Fry about 2 minutes per side, pressing down on the patties so they make good contact with the pan and brown evenly. Transfer cooked hamburgers to a plate. Set aside.
  3. Add butter and onions to hot pan. Cook and stir until soft and translucent, about 3 minutes. Add flour. Cook and stir 2 minutes.
  4. Add beef broth. Continue to stir while scraping up any browned bits on the bottom. You may want to switch to a whisk to help everything come together smoothly. Stir in 2 teaspoons each, soy sauce and Worcestershire sauce. Taste and add an additional teaspoon of each, if desired. Gravy is done once it comes to a simmer and has slightly thickened. Remove from heat.
  5. Fry eggs as desired.
  6. To serve, place a mound of rice on each plate. Top with hamburger patties. Smother with gravy and onions. Lay fried egg over the top of each mound. Try to stay awake for the rest of the day . . . or not!
