Strawberry Chia Pudding

Makes About 2 Cups

Simple to assemble and no cooking required! This high protein, high fiber pudding only requires an overnight soak to thicken into pudding perfection. This lightly sweet treat will be your new breakfast favorite.

Ingredients:

  • 2 cups homemade cashew milk, or store-bought milk of your choice
  • 6 tablespoons chia seeds
  • 1/4 cup strawberry jam
  • Pinch salt
  • OPTIONAL:
  • Strawberry jam
  • Coconut whipped topping
  • Fresh cut strawberries

Directions:

  1. In a medium bowl, whisk together all ingredients. Cover and refrigerate overnight.
  2. Stir, and then spoon into jars. If desired, layer with more strawberry jam, top with coconut whipped topping, and finish with cut strawberries.
