French Onion Ramen Recipe

French Onion Ramen

Serves 4

Cheesy, rich, and decadent, this is pure comfort in a bowl. Sweet caramelized onions blend beautifully with ramen noodles. Top with cheese and fresh herbs for a satisfying and savory twist on a classic.

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup dry red wine
  • 4 (3 ounce) packages instant ramen noodles, beef flavor
  • 4 thyme sprigs, plus more for garnish
  • 1 cup Gruyère cheese, shredded
  • Pepper, to taste
  • Aged balsamic vinegar, to taste

Directions:

  1. Place 4 oven-safe bowls on a sheet pan and set aside.
  2. Heat butter in a large pot over medium heat. Add onions, cover pot with a lid, and cook until translucent, 2 to 3 minutes. Remove lid, increase heat to medium-high, and continue cooking, stirring occasionally, until onions are deeply caramelized. If the bottom of the pan becomes dark, periodically deglaze with a tablespoon or two of water.
  3. Add garlic and stir. Add red wine and cook until almost dry, scraping up and dissolving any brown bits from bottom of pot.
  4. Add 8 cups water, all 4 ramen seasoning packets, and 4 thyme sprigs. Increase heat to high and bring to boil.
  5. Add ramen noodles and cook 3 minutes or until noodles reach preferred doneness. Portion noodles and onions into the individual oven-safe bowls. Ladle in broth until barely covered.
  6. Top each bowl with shredded cheese. Transfer pan to oven. Brown under broiler until bubbly, about 2 to 3 minutes.
  7. Finish with additional thyme leaves, freshly cracked black pepper, and a drizzle of balsamic.
