The Best 4-Ingredient Roasted Broccoli

Serves 5 to 6

High heat is the key to crispy-on-the-outside, crunchy-on-the-inside, perfectly roasted broccoli. Nothing soggy here! This is an easy, flavorful dish good enough to snack on by itself!

Ingredients:

  • 1 1/2 pounds broccoli florets
  • 2 ounces grated parmesan cheese, (See Cook’s Tip)
  • 1/2 teaspoon crushed red pepper flakes
  • 1 small lemon

Directions:

  1. Preheat oven to 425°F. Line a sheet pan with parchment paper.
  2. In a large bowl, toss broccoli with most of the parmesan, the chili flakes, and a drizzle of extra virgin olive oil. Season with salt and pepper, to taste.
  3. Spread evenly on sheet pan and top with remaining parmesan. Roast until golden and crispy, about 20 minutes.
  4. Remove from oven. Grate lemon zest over pan and squeeze juice from half of lemon all over. Garnish with lemon slices, if desired. Serve immediately.
  5. Cook’s Tip:
  6. Make it plant-based by subbing nutritional yeast for the cheese.
