4-Ingredient Albacore Tuna Stew

Serves 4

This tasty, hearty, and simple meal is inspired by marmitako, a stew meaning "from the pot," developed by fishermen in Spain's Basque country.

Ingredients:

  • 4 medium Yukon Gold potatoes (about 1 pound), cut into 1-inch pieces
  • 1 (24 ounce) jar shakshuka sauce
  • 2 (6 ounce) cans albacore tuna
  • 1 cup manzanilla or Castelvetrano olives, pitted

Directions:

  1. Place potatoes in large pot and cover with an inch of water. Bring to a boil and stir in 1 teaspoon of salt. Reduce to a simmer and cook 8 to 10 minutes, or until tender. Drain.
  2. Return pot to stove and add potatoes, shakshuka sauce, tuna, and olives. Bring to a simmer.
  3. Serve warm. It pairs well with toasted bread!
