Roasted Asparagus with Prosciutto

Serves 6

Wrap prosciutto around asparagus spears and oven-roast for a special appetizer or vegetable side dish.


  • 18 asparagus spears, trimmed (see Cook's Tip)
  • 2 tablespoons extra virgin olive oil
  • Kosher salt, to taste
  • Pepper, to taste
  • 18 slices prosciutto
  • 1/2 cup grated parmesan cheese


  1. Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper.
  2. Wrap a slice of prosciutto around each asparagus spear.
  3. Roast 10 minutes or until asparagus is just tender.
  4. Sprinkle with parmesan. Return to oven for 1 minute, just until cheese melts.
  5. Cook's Tip:
  6. To trim asparagus, hold opposite ends of each spear and bend until tough end breaks off. Discard tough parts.
