Olive Oil Cake

Serves 8

This light, simple cake is not too sweet and has a wonderful depth of flavor. It's perfect with a cup of coffee or served with a liqueur for dessert. After you master the basic recipe, experiment with different flavor combinations.


  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 cup extra virgin olive oil
  • 1 cup whole milk
  • Zest of 3 oranges
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • Powdered sugar


  1. Preheat oven to 350°F.
  2. Butter and flour a 9-inch round cake pan.
  3. In a large bowl, whisk together eggs and sugar until well blended. Add olive oil, milk, and orange zest. Mix well.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Add to egg mixture. Stir just until blended. Do not over mix.
  5. Pour batter into prepared pan. Bake 30 to 35 minutes or until a toothpick inserted in center comes out clean.
  6. Remove from oven and cool in pan 10 minutes. Loosen sides of cake with a knife. Invert onto a wire rack. Flip upright onto serving plate. Dust with confectioners' sugar, if desired.
