Dungeness Crab Cake Burger Recipe


  • 4 large Dungeness crab cakes
  • 4 tablespoons unsalted butter
  • 4 brioche buns
  • 1/2 cup aioli
  • 1 avocado, sliced thin
  • 1 watermelon radish or 3 regular radishes, sliced thin
  • Pickled fennel (follow instructions for Quick Pickled Vegetables)
  • Your favorite greens or microgreens


  1. Melt butter in a large skillet over medium heat. Add crab cakes and cook 2 to 3 minutes. Flip and cook an additional 2 to 3 minutes until golden on both sides.
  2. Open buns and place on a sheet pan, cut sides up. Adjust oven rack to upper third of oven and set to broil. Broil buns until lightly toasted. Watch closely as they can burn quickly.
  3. Slather bun bottoms with a tablespoon of aioli each. Place a crab cake on each bun and top with additional aioli, radish, avocado, pickled fennel, and greens. Serve immediately.
