Savory Chickpea Waffles with Turkey BLTA Salad

Break away from the classic ‘day after' turkey sandwich with chickpea flour waffles topped with turkey, bacon, and avocado salad.


  • Turkey BLTA Salad:
  • 2 cups shredded cooked turkey
  • 1/4 cup Mama Lil's Roasted Peppers, drained
  • 1/4 cup thinly sliced roasted tomatoes (available jarred and on our olive bar)
  • 4 slices bacon, cooked and crumbled
  • 1 cup baby arugula or microgreens
  • 1 tablespoon extra virgin olive oil
  • 1 avocado, diced before serving
  • Chickpea Waffle:
  • 3/4 cup chickpea flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 3/4 cup milk
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon Aleppo pepper or chili flakes
  • 2 large eggs, separated
  • 2 teaspoons lemon juice or white vinegar
  • 1/2 cup shredded provolone or asiago cheese


  1. In a medium bowl, combine all ingredients for Turkey BLTA Salad, except avocado. Cover and chill, if made ahead of serving.
  2. Make waffle batter: In a large bowl, whisk together chickpea flour, baking powder, and salt. Whisk in milk, olive oil, pepper, egg yolks, and lemon juice. Stir in cheese, if using. In a separate clean bowl, use an electric mixer to beat egg whites to stiff peaks. Fold into batter.
  3. Cook waffles in preheated, lightly oiled waffle iron according to manufacturer's directions.
  4. To serve, add avocado to salad and plate with waffles.
