Coconut Rice Recipe

Coconut Rice

Serves 4-6

Fragrant and flavorful, coconut rice is the perfect accompaniment to curries and other spicy dishes that benefit from a cool sidekick.


  • 2 cups long-grain rice
  • 1 can (4 oz) full-fat coconut milk
  • 1/2 cup water
  • 3 Tbsp coconut, unsweetened dried (desiccated)
  • 1 Tbsp sugar
  • 1 tsp kosher salt
  • Optional Toppings:
  • Toasted coconut
  • Lime zest


  1. Rinse and drain rice 3-4 times to remove excess starch. Cover rice with water and soak for 15 minutes. Drain.
  2. Heat a medium saucepan over medium heat. Open can of coconut milk; skim coconut fat from top of milk and place in pan to melt. Add drained rice and stir to coat with melted coconut fat.
  3. Slowly pour in the coconut milk and 1/2 cup of water. Add dried coconut, sugar, and salt. Stir to combine.
  4. Bring to a low boil and stir once. Cover, reduce heat, and simmer for 15 minutes. Remove from heat and leave lid on. Allow to rest for 10 minutes.
  5. Remove lid, fluff rice with a fork, and adjust seasoning as needed. Garnish with toasted coconut and lime zest.
