Garam Masala Roasted Cauliflower

Serves 4

Liven up roasted cauliflower with the warm flavors of garam masala, an aromatic blend of ground spices used in Indian cuisine. Toasted panko adds texture and crunch.

Ingredients:

  • 1 pound cauliflower florets
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons plus 1 teaspoon garam masala
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1 tablespoon coconut oil
  • 2 cloves garlic, minced
  • 1/3 cup panko (Japanese breadcrumbs)
  • 1/4 cup cilantro, chopped

Directions:

  1. Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper. In a large bowl, toss cauliflower with 2 tablespoons olive oil, 2 tablespoons garam masala, and 1/2 teaspoon kosher salt. Spread evenly across prepared pan. Roast 20 to 25 minutes or until golden and tender.
  2. While cauliflower is roasting, melt coconut oil in a sauté pan over medium heat. Add garlic and 1 teaspoon garam masala; stir. Add panko, mix gently, and cook until toasted and golden. Season with salt, to taste.
  3. To serve, place roasted cauliflower in serving dish and top with toasted panko and chopped cilantro.
