Cauliflower and Celery Root Mash

Serves 8

Ingredients

  • 1 head cauliflower (about 2 pounds)
  • 1 celery root (celeriac) (about 1 pound)
  • 1/4 cup extra virgin olive oil (divided use)
  • Kosher salt (to taste)
  • Pepper (to taste)

Optional Ingredients

  • Nutritional yeast
  • Fresh thyme leaves

Directions

  1. Heat a large deep skillet over medium- to medium-high heat. Add 2 tablespoons olive oil. Add cauliflower and celeriac. Saute10 minutes until lightly golden and fragrant. Season with salt and pepper.
  2. Add 1/2 cup water, cover, and adjust heat so mixture simmers gently. Cook 20 to 30 minutes, until tender. If water evaporates before veggies are ready, add a little more water.
  3. Remove from heat. Set aside to cool until safe enough to process in a blender or food processor. To blend while hot, use an immersion blender.
  4. Purée vegetables until smooth, adding a bit more water, as needed. Season with salt and pepper. Swirl in 2 tablespoons olive oil.
  5. Serve warm sprinkled with thyme and nutritional yeast, if desired.

Cook Tips

Can be made up to 2 days ahead and kept chilled. Reheat gently before serving.

For added flavor, use your favorite broth in place of water.
