Classic Buttermilk Batter for Waffles or Pancakes

MAKES 6 LARGE WAFFLES

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup toasted wheat germ (optional)
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 cups buttermilk
  • 2 large eggs

Directions

  1. In a large bowl, whisk together dry ingredients.
  2. Make a well in the center. Add buttermilk and eggs. Whisk until just combined and no lumps remain. Stir in butter.
  3. Cook on waffle iron according to manufacturer's instructions or portion onto greased griddle over medium heat for making pancakes.
