Cranberry Brie Bites

These simple appetizers are easy to make during the busy holiday season. Tart cranberries pair particularly well with brie, and who doesn't love a buttery crust?

Ingredients

  • 8 ounces crescent roll dough (1 tube)
  • 7 ounces brie cheese (rind removed)
  • 1/3 cup cranberry sauce
  • 1/3 cup chopped pecans
  • Fresh thyme leaves

Directions

  1. Preheat oven to 375°F. Lightly grease a 24-cavity mini muffin tin.
  2. Unroll crescent dough onto a lightly floured surface. Pinch seams together and pat into a 12x8-inch rectangle. Cut into 24 squares. Place squares into muffin tin cups.
  3. Cut brie into 24 small pieces (about 1 rounded teaspoon each). Gently press one piece of cheese into bottom of each dough-lined cup. Top each with a rounded 1/2 teaspoon cranberry sauce and chopped pecans.
  4. Bake 8 to 12 minutes or until pastry is golden brown.
  5. Sprinkle with fresh thyme leaves. Serve warm.

Cook Tips

Instead of crescent roll dough, you can use pie dough, rolled into a 12x8-inch rectangle about 1/4-inch thick.
