Garam Masala Roasted Cauliflower
Serves 4
Liven up roasted cauliflower with the warm flavors of garam masala, an aromatic blend of ground spices used in Indian cuisine. Toasted panko adds texture and crunch.
Ingredients
- 1 pound cauliflower florets
- 2 tablespoons extra virgin olive oil
- 2 tablespoons plus 1 teaspoon garam masala
- 1/2 teaspoon kosher salt (plus more to taste)
- 1 tablespoon coconut oil
- 2 cloves garlic (minced)
- 1/3 cup panko (japanese breadcrumbs)
- 1/4 cup cilantro (chopped)
Directions
- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper. In a large bowl, toss cauliflower with 2 tablespoons olive oil, 2 tablespoons garam masala, and 1/2 teaspoon kosher salt. Spread evenly across prepared pan. Roast 20 to 25 minutes or until golden and tender.
- While cauliflower is roasting, melt coconut oil in a sauté pan over medium heat. Add garlic and 1 teaspoon garam masala; stir. Add panko, mix gently, and cook until toasted and golden. Season with salt, to taste.
- To serve, place roasted cauliflower in serving dish and top with toasted panko and chopped cilantro.
