Quick Pickled Shrimp

Serves 6 to 8

This is the perfect make-ahead appetizer. It's quick, easy, and delicious - and it will be ready to serve as soon as your guests arrive.

Ingredients:

  • 1 cup white wine vinegar
  • 1 cup extra virgin olive oil
  • 2 teaspoons kosher salt
  • 2 small shallots, sliced
  • 10 cloves garlic, thinly sliced
  • 1 tablespoon whole coriander seeds (See Cook's Tip)
  • 3 tablespoons chopped fresh dill
  • 1 pound cooked shrimp (31/35 count), peeled and deveined
  • 1/2 cup chopped fresh flat-leaf parsley leaves

Directions:

  1. In a large bowl, whisk together vinegar, olive oil, and salt.
  2. Add shallot, garlic, coriander, dill, and shrimp. Toss gently to combine.
  3. Cover and refrigerate at least 1 hour and up to 24 hours.
  4. To serve, plate shrimp and sprinkle with chopped parsley.
  5. Cook's Tip:
  6. For more flavor, crack coriander seeds with a mortar and pestle or with the back of a spoon.
